イセヒカリは1989年、伊勢神宮の神田で台風被害を受けた際、多くの稲が倒れる中、倒伏せず実った株から選抜された品種です。採種と育成を重ねて固定化され、強い生命力を持つことから「神の米」とも呼ばれています。
Born from a miracle at the Ise Grand Shrine in 1989, Ise-hikari is a variety selected from the only stalks to survive a powerful typhoon. Through years of careful breeding, this resilient grain was perfected. Today, it is celebrated as "The Divine Rice," a symbol of life force and spiritual strength.

昔ながらの稲作
The Art of Traditional Farming
前の年に穫れたお米を種もみとして使い、塩水選や温湯消毒、稲架掛けといった伝統的な農法を守りながら、農薬や化成肥料を使わずに丁寧にお米を作りました。そのお米を原料として、日本酒に仕立てています。
Our sake begins with rice grown in harmony with nature. We use heirloom seeds saved from the previous year and embrace time-honored methods—natural disinfection and sun-drying—while completely avoiding synthetic pesticides and fertilizers. This labor-intensive process preserves the true essence of the rice, which we then transform into our signature sake.

Brewing to Honor the Rice
機械に頼らず「箱麹法」という伝統的な手仕事で麹を醸します。精米歩合90%という、お米のエネルギーを削ぎ落とさない選択。それは、米の持つ可能性を最大限に引き出し、素材本来の旨みを表現する「低精白による未来の酒造り」への挑戦です。
We handcraft our koji using the traditional "Hako-koji" method, avoiding modern machinery. By choosing a 90% polishing ratio, we preserve the grain’s natural energy and umami. This commitment to "low-polishing" is our challenge to the future of brewing—unlocking the full potential of the rice to deliver a flavor that is both powerful and refined.
